Combine oats, rinsed raisins, chopped almonds, milk powder and egg in an oven-safe glass bowl. Stir vigorously until everything is evenly mixed and the egg is fully incorporated into the mixture.
Bake in a preheated oven for approximately 20 minutes. For the best fruit texture, add sliced banana during the last 5 minutes of baking — adding it too early will overcook the banana into mushy, watery pieces that make the whole bake soggy
Once fully baked, remove from the oven and sprinkle a light layer of shredded coconut or extra rolled oats over the top for subtle crunch. Serve warm
Microwave alternative: If you don’t have an oven, microwave on high for 5 minutes first. Check doneness, and continue cooking in 1-minute increments until the center is fully set
