- 1 green onion
- 2 thin ginger slices
- Small amount of cooking oil

Prep all base ingredients: Peel the sponge gourd and cut into uniform bite-sized chunks. Rinse white beech mushrooms thoroughly, trim off the tough root base and cut into short sections. Beat eggs until smooth and well combined. Finely chop the green onion and julienne the ginger slices.
Heat a thin layer of cooking oil in a soup pot over medium heat. Pour in the beaten eggs and scramble lightly until just fully set. Scoop out and set aside — pre-cooking the eggs builds a richer, more rounded savory flavor in the finished broth
