red bean and lotus seed soup

Ingredients
  

  • 30 g Lotus seeds
  • 80 g red beans
  • 20 g raisin
  • 15 g Sticky rice
  • 10 g crystal sugar

Instructions
 

  • Wash the red beans and lotus seeds thoroughly and soak them in cold water for several hours or overnight
  • Drain the soaked red beans and lotus seeds, pour them into a pot with cold water, turn on the heat and boil
  • Put glutinous rice and raisins in a bowl, add water, stir in circles with chopsticks, and rub the raisins with your hands
  • Add red beans and lotus seeds to the boiling water and cook for about 20 minutes. Then add the washed and drained glutinous rice and raisins
  • Stir, cover and continue cooking for about half an hour, then add rock sugar
  • After stirring evenly, continue to cook on low heat until the soup in the pot becomes thick, the glutinous rice is soft, and the red beans are just cooked. Then turn off the heat
  • Cover the pot and continue to simmer for about 10 minutes. Ladle into a bowl and enjoy
