Use the back of a knife to gently pound the surface evenly — this breaks up tight muscle fibers so seasoning penetrates deeper and the meat cooks more evenly. Poke the surface all over with a fork to create tiny channels for the marinade to sink into.
Marinate thoroughly: Rub both sides of the chicken with salt, cracked black pepper, cornstarch and a tiny drizzle of olive oil. Massage the seasoning gently into the meat for 30 seconds, then let rest at room temperature for 1.5 to 2 hours. For busy weekday schedules, do this step the night before and marinate in the fridge overnight — just sear it in the morning for a quick breakfast or lunch prep.
Sear to perfection: Heat a thin layer of olive oil in a non-stick pan over medium-low heat. Lay the chicken cutlets flat in the pan, do not move them for 3–4 minutes. Let the bottom sear into a deep golden-brown crust before flipping. Cook the second side for another 3–4 minutes until evenly browned.
Test for doneness: Pierce the thickest part of the chicken with a chopstick. If clear juice runs out with no pink tinge, it’s fully cooked. Remove from the pan immediately to avoid overcooking into dry, stringy meat. Let rest for 2 minutes before slicing to lock in juices
