Ingredients
  

  • 1 head romaine lettuce
  • 3 cherry tomatoes
  • 50 g broccoli florets
  • ½ cucumber
  • ½ bell pepper
  • 10 g vinaigrette dressing
  • Freshly ground black pepper, to taste
  • 1 frozen French bread roll
  • swap white French bread for whole-grain for extra fiber

Instructions
 

  • Toast the bread: Take the frozen French bread out of the freezer. Lightly mist the surface with water — this locks in a soft crumb while creating a crisp, golden crust. Bake at 230°C (445°F) for 8 minutes, until the outside is crunchy and the inside is fully thawed and tender. Let cool slightly, then cut into bite-sized cubes
  • Prep the vegetables: Rinse all produce thoroughly. Tear lettuce into bite-sized pieces, halve cherry tomatoes, slice cucumber and bell pepper into strips. Bring a small pot of water to a boil, add broccoli florets and blanch for exactly 1 minute. Immediately transfer to ice water to stop cooking — this preserves bright green color and crisp-tender texture. Drain completely
  • Assemble the salad: Put all drained vegetables and bread cubes into a large salad bowl. Drizzle with vinaigrette and season with freshly ground black pepper
  • Toss gently and serve right away. For extra crunch, reserve a handful of bread cubes to sprinkle on top right before eating
