Cold Sweet Potato Shreds

Sweet potatoes are a common food. When I was a child, my family was poor, so we would boil sweet potatoes for one meal and stew them for the next. Occasionally, we would change things up by making sweet potato steamed bread.

Ingredients
  

  • 1 sweet potato
  • 50 g carrot
  • 20 g Green pepper appropriate amount
  • light soy sauce appropriate amount
  • refined salt appropriate amount
  • Chili oil appropriate amount
  • White vinegar appropriate amount

Instructions
 

  • Peel the sweet potatoes and cut into thin strips. Cut the green peppers and carrots into thin strips
  • Put the shredded sweet potatoes, carrots and green peppers into boiling water and blanch them
  • Blanch the shredded sweet potatoes, carrots, and green peppers, then rinse with cold water and set aside
  • Pour the shredded sweet potatoes, carrots and green peppers into a larger bowl, add salt, light soy sauce and white vinegar. If you like sesame oil, add some as needed. Mix well and serve
