  • Prep the vegetables: Cut broccoli into small, uniform florets. Bring a pot of lightly salted water to a rolling boil, add broccoli and blanch for exactly 1 minute. Drain immediately and rinse with cold water to lock in its bright green color and crisp-tender bite. Soak dried wood ear mushrooms in warm water for 10 minutes until fully rehydrated, trim off tough stems, and tear into bite-sized pieces.
  • Prep the garlic: Crush and roughly chop the garlic cloves. A quick garlic-infused oil builds most of the flavor in this simple dish, so don’t skip this step.
  • Build the aromatic base: Heat a small amount of olive oil in a pan over low heat. Add garlic and sauté for about 30 seconds until fragrant — take care not to burn it, as burnt garlic turns bitter and ruins the dish.
  • Toss and finish: Add blanched broccoli florets to the pan and stir-fry briefly for 30 seconds. Toss in rehydrated wood ear mushrooms and continue stir-frying for 1 more minute, just long enough to heat everything through evenly. Season with a light pinch of salt, stir well, and serve immediately.
