Prep the starches: Scrub the sweet potato clean and place it whole in a steamer. Steam for 15–20 minutes until fork-tender. At the same time, hard-boil the egg: place in cold water, bring to a boil, then simmer for 8 minutes. Transfer to ice water to cool, then peel and cut in half.
Cook the vegetables: Bring a pot of lightly salted water to a boil. Add broccoli florets and lettuce leaves, blanch for 1 minute just until crisp-tender. Drain immediately and set aside — overcooking will turn veggies mushy and deplete their nutrients
Cook the marinated chicken: Pan-sear with a tiny splash of oil, or steam alongside the sweet potato for a completely oil-free option. Cook until fully opaque with no pink inside
Assemble the plate: Arrange steamed sweet potato, cooked chicken, blanched broccoli and lettuce, corn kernels, halved egg and cherry tomatoes on a plate. Cut cherry tomatoes in half for easier eating and better flavor release
