Ingredients
  

  • 120 g boneless, skinless chicken breast
  • 1 ripe tomato
  • 12 g romaine lettuce
  • 4 g fine sea salt
  • 10 g Chinese cooking wine
  • 5 g ground black pepper
  • 1 large egg
  • 1 thin slice ginger
  • Small amount of cooking oil

Instructions
 

  • Prep the base ingredients: Wash tomato and lettuce thoroughly with salted water to remove surface residue. Place the egg in a pot of cold water, bring to a boil and cook for 8 minutes. Transfer to ice water to cool, then peel and cut in half.
  • Tenderize and marinate the chicken: Slice the chicken breast horizontally into two thinner cutlets. Use the back of a knife to pound both sides evenly — this breaks up tight muscle fibers so the meat stays tender and absorbs seasoning better. Sprinkle with salt and black pepper, massage gently into the meat, then add ginger slices and cooking wine. Refrigerate to marinate for about 10 minutes. For thicker cuts, extend marinating time for deeper flavor.
  • Sear the chicken to perfection: Heat a small amount of oil in a frying pan over high heat. Lay the chicken cutlets flat in the pan and sear undisturbed — high heat locks in juices fast. Flip once the bottom turns golden, then cook the other side. The chicken is done when a chopstick pierces through easily with no pink juice leaking out. Do not overcook, or it will turn tough and dry.
  • Assemble the salad: While the chicken cooks, chop the tomato and tear lettuce into bite-sized pieces. Arrange lettuce, tomato and halved boiled egg on a plate. Slice the seared chicken breast and place on top. Serve immediately while warm.
