Sweet potatoes are a common food. When I was little, my family was poor, so we’d boil sweet potatoes one day and simmer them the next. Occasionally, for a change, we’d make sweet potato steamed bread.

Back then, I dreamed of eating white flour buns every day. Even without vegetables, they were incredibly sweet.

I used to think sweet potatoes were only eaten boiled, in porridge, or roasted. Today, I’m trying something different and serving it cold!

I’ve tried it myself, and it tastes great! It’s more refreshing than cold shredded potatoes, so I recommend it.

Cold Sweet Potato Shreds

Sweet potatoes are a common food. When I was a child, my family was poor, so we would boil sweet potatoes for one meal and stew them for the next. Occasionally, we would change things up by making sweet potato steamed bread.

Ingredients
  

  • 1 sweet potato
  • 50 g carrot
  • 20 g Green pepper appropriate amount
  • light soy sauce appropriate amount
  • refined salt appropriate amount
  • Chili oil appropriate amount
  • White vinegar appropriate amount

Instructions
 

  • Peel the sweet potatoes and cut into thin strips. Cut the green peppers and carrots into thin strips
  • Put the shredded sweet potatoes, carrots and green peppers into boiling water and blanch them
  • Blanch the shredded sweet potatoes, carrots, and green peppers, then rinse with cold water and set aside
  • Pour the shredded sweet potatoes, carrots and green peppers into a larger bowl, add salt, light soy sauce and white vinegar. If you like sesame oil, add some as needed. Mix well and serve
