Crucian carp, also known as “carp fish” or “xitou,” is a species of carp found throughout China. Crucian carp, commonly known as “crucidian melon seeds,” boasts delicious, tender meat. It is a nutritionally comprehensive fish, high in protein and low in fat, offering a fresh, non-greasy, and slightly sweet taste. It is a highly adaptable fish, with its fattest catches from February to April and August to December.

Crucian carp and tofu soup

Ingredients
- 1 Crucian carp
- 2 pieces tofu
- salt appropriate amount
- 1 pieces ginger
- 10 g green onions
Instructions
- Prepare the ingredients: a crucian carp, a piece of tofu, a piece of green onion, a piece of ginger
- Wash the tofu and cut it into pieces about 1 cm thick
- Clean the crucian carp and cut it with a slanting knife
- Heat oil in a pan, add onion and ginger and sauté
- After sautéing the scallions and ginger, add the fish and fry it, being careful not to burn it
- After frying the fish, pour in an appropriate amount of water, bring to a boil, then simmer on low heat for about half an hour
- Cook the fish soup until it turns white, then add tofu cubes… add appropriate amount of salt
- Add tofu cubes and cook until the fish soup is thick and white
- After the soup is cooked, you can serve it in a bowl and sprinkle some chopped green onions on it
